Our entry machine the V368 has a maximum cutting with of 320mm so would be ideal for small to medium sized fishmongers. The V358 models offer greater flexibility as these machines allow thin and deep skinning. For larger fish such as as shark, tuna, swordfish we would suggest the V548 and V648 machines as these machines allow a greater cutting width.
